Kimchi, chili peppers, sesame seeds and ponzu sauce – plus your choice of chopsticks or western cutlery, it’s up to you: the fusion experience from David Copmans (Osaka) and chef Ana Boznar (ex-AirRepublic) rides the pan-Asian culinary wave on Muntplein square. Seated at one of the small tables in a space done up with plenty of concrete, or on the incredible sunny terrace, you place your order online – a sophisticated system, certainly, but we still prefer a more personalized touch. On our shared plates (which can also be ordered as individual portions): broccolini grilled over the embers and served with kimchi mayonnaise; sticky BXL sprouts in a sweet and sour glaze, sprinkled in peanuts and katsuobushi; incredibly fresh cucumber and sesame salad; iconic dan dan noodles; or even a bowl of rice with pork belly – that could have used a touch more kimchi… // Janjan Bon
