Sandwiches galore! After embarking on a globetrotting adventure through the world of street food, Dorian Fiette set aside his backpack and opened this lovable little sandwicherie. In a space featuring a long counter, Formica tables and a fridge full of wine, this “entre-pain-eur” (who honed his skills in the kitchens of Gordon Ramsey in London and Miles in Bordeaux) crafts a colorful lineup of sandwiches inspired by global flavors, using the best produce available from the Marché des Capucins farmers’ market and bread from the Cérès bakery. Take, for example, the Thai-inspired burger combining marinated chicken and lemongrass mayonnaise in a badass bun made from croissant dough, or the very punk club sandwich with crispy chicken, a sweet slice of slow-roasted butternut squash and honey mustard mayo. To go with all that, you can opt for a side of pommes dauphines made with new potatoes and Maldon salt, served with smoky chili-beetroot ketchup. At night and on Sundays, Populaire transforms into a wine bar, serving plates that pack a punch: glazed pork loin with a satay, red kuri squash and Korean spice condiment; cuttlefish ragù elevated with a rich guinea fowl jus; creamy rice pudding, sprinkled with black sesame seeds and toasted hazelnuts… // Ari Beaux
