Amen to good wine! Tucked away behind the cathedral, Trinquons is the kind of spot that gets Rodez’s sharper palates fluttering. The idea for this wine bar-cum-cave à manger was born on the road, as Adeline Salaün (ex-Le Quinzième by Cyril Lignac in Paris) and Vincent Christophoul (sommelier and wine educator) crisscrossed France in a van, meeting winemakers and drinking its terroirs. The result? A tightly edited line-up of natural wines, local discoveries and other characterful elixirs. On Thursday and Friday evenings, the plates dial things up with grazeable hits like tamago egg, tandoori eggplant and other shareable nibbles. Come lunchtime, it’s all about focaccia, golden as an Italian summer, generously stuffed with Mayrinhac farmhouse ham, a mascarpone and mushroom combo, or aged Simmental steak spiked with oregano. Everything is homemade, naturally, designed to be washed down with a juicy glass of wine or a perfectly pulled specialty coffee. What shall we toast to? La belle vie. · Aya Bouriole
