Eating green is good for the planet – and even better for your taste buds! Especially if Kaat Van Den Eynde has anything to do with it. After training as a macrobiotic nutrition coach at De Avalonhoeve and doing a stint at Mer Du Nord in Brussels, she and her partner Lien opened Vangroeten, a neobistrot that radiates warmth and conviviality (cream-colored curtains, green sofas and low lighting). The evening we went, crafted with produce from the fresh veg box from local producers, plant-based flavor bombs exploded with vibrant color: beetroot dip with faux feta, roasted cauliflower and black lentils – perfect for scooping up with Brijosh garlic sourdough bread; broccolini with vegan burrata from Omage in Ghent, drizzled with basil vinegar; and creamy faux-mage croquettes made with cashew nuts and mizuna. FEELING THIRSTY? Natural wines galore, naturally: Una Volta, a fruity macabeau from Josep I Pau in Catalonia (€7 a glass), Chiaro, a white blend from the Gismondi winery in Campania (€8) or Bandita, an Italian barbera from Cascina Tavijn (€20 a bottle). As for the sober-curious, there’s no need to feel green with envy: a refreshing pine juice drink from Wostok Berlin or no-lo marigold pet’ nat’ from Rish (€4.50 to €8.50).
