After working as a journalist and at a culinary creative agency, Élise Flamant has now matured her life plan with this Pantin cheesemongers in shades of (double) cream, opened with her sidekick Emmanuelle Lefrançois (who’s also behind Fromagerie du Pré). The deal? House dairy specialties (brie with hazelnut and wild garlic pesto, piment d’Espelette butter, etc.) and cheeses from all walks of life, like Saint-Marcellin from Isère, Vacherin from Aravis, and raw cow’s milk Monlési from Neuchâtel. And while you’re at it, there are plenty of goods to make your basket overflow, like quince or juniper paste, pickled green tomatoes from the Conserverie de la Forêt, and even something to help it all slide down, with a selection of natural wines. In short, nothing but the crème de la crème! // Henriette Ma
THE HIDDEN GEM: The racotin made from raw goat’s milk, matured on site (€6.10 each).
