The future belongs to late-rising breads! Like those made with natural levain and organic flour by Sophie Viot Coster, a businesswoman-turned-baker who settled down with her loaves in tow in Le Pré-Saint-Gervais. And she’s been racking them up the way Bezos racks up dollars: country bread with figs and walnuts, mixed wheat and rye loaves, or ones made with buckwheat and rice flour or einkorn flour… in addition to a lovely range of viennoiseries, from classic buttery croissants to pains au chocolat, not to mention the orange blossom madeleines or the chocolate babka. And when it’s time for your lunch break, grab a well-made sandwich (like the one with sardines, fromage frais and cucumber) that’ll make you want to step away from the computer for a real pause. // Henriette Ma

THE HIDDEN GEM: Focaccia pimped out with potato chips and rosemary, or kasha and fresh cilantro (€3.50 a slice).
