In 2022, the then 34-year-old Jonathan the osteopath became Jonathan the pastry chef. We’ll skip the when, how and why of the career switch, but one thing’s clear: Mr. Rochetin is still doing the body good. His specialty? Cream puffs, a classic French pastry he revisits with real panache, sometimes even filling some on the spot right before your very eyes! In his dusty-rose walled shop in the quiet Foch neighborhood, choose your size – small or large (the latter packed with whipped cream) – and one of the fillings of the day. And honestly, it’s always a great day. Freshly piped to order, the beautifully golden craquelin choux are filled with a lightly sweetened crème pâtissière perfumed with praline or mango and passion fruit, or come as a Paris-Brest or Mont Blanc re-styled – mind-blowing combinations that make it very hard to stop at just one! The softly humming display case holds the morning’s cream puffs (blueberry cream with violet Chantilly) alongside exotic pavlovas, neatly layered seasonal fruit dacquoises and irresistibly crisp chocolate croustillants.
