After leaving the world of cinema behind, Zied Mokaddem has become something of a baking wizard, transforming locally-milled flours, natural leaven and wild yeasts into loaves worth their weight in gold. As soon as you enter Khobz, guarded by the owner’s beautiful Akita breed of dog, the magic of heirloom wheats (and the sleek design) takes effect: opt for the signature sourdough loaf or other, less classic options – coffee and mixed seeds, dried lime, pepper and sweet potato… We also quickly fall under the spell of his pastries: rolls of all kinds (cinnamon, sesame, poppy), almond croissants, delicate brioches, chocolate babka, and a pizzetta with sweet onions and blue poppy seed – to die for!
