All good things come to those who wait in this part of Uccle, long lacking in any decent thirst-quenching wine shops… Until the team at Chez Franz and Chez Richard (Mallory Saussus, Thomas Kok and Sadri Rokbani) showed up with this mini-HQ for looney vinopaths. Here you’ll find Yann Grappe (a wine historian) and Étienne Marsal (a musician), who have replaced this old confectionery’s candy with colorful, punky labels: a Loire Grolleau gris from Baptiste Cousin, a Savoyard Jacquère from Mathieu Apffel, or a German red called Vin de Soif from Kleines Gut. Pop a bottle open while perched precariously on one of the high stools or while leaning more confidently at the counter (€12 corkage fee), and pair it with egg mayo and pickled beetroot, blowtorched cucumbers, feta cream, preserved lemon and homemade zaatar (€10), or charcuterie and cheese platters (€15). // Sam Oops

THE BULLET-PROOF BOTTLE: Traminer Ouillé, a Jura white from the aptly named Didier and Jules Grappe (€30).
