Les Garçons Bouchers? They’re a well-known French punk-rock band, to whom musicians Walid Khalil and Mike Abs wanted to pay tribute with their butchering spot! It’s true that the long line of fans often stretching all the way to Dieweg cemetery looks like there’s a gig going on! Inside, the pristine, glossy, black-and-white tiled stage sets the tone for the majestic meats displayed all over the shop: hanging from hooks, showcased in the counter display or resting in the dry-aging cabinets. The house motto even has the makings of a hit: short supply chain, zero waste, organic meats – such as pork from Porcs Qualité Ardenne and poultry from Xavier Abadi in the Gers. If you’re suffering from stage-fright when it comes to cooking oxtail or a breast of lamb, these butchers are happy to share their friendly, expert advice.
