Something’s brewing! Since May 2023, youngsters Manon Pinchart (head baker) and Alexis Boisseau (fermenter for En Stoemelings, among others) have been glutenizing the Marolles neighborhood one loaf at a time. The 411? A vast industrial space combining concrete and aluminum, where you can grab the signature spelt loaf, unusual breads (like the one with caramelized apple that day) or ham and bechamel croissants, all made with naturally leavened dough and Belgian ancient grain flours, without an additive in sight. Into the bargain, there’s a mini épicerie selection including Sainte Odile lambic vinegar and Must mustard seed pickles, plus a small selection of brews, like Curieuse Neus tripel from En Stoem’ or even a house maitrank. // Rosa Poulsard
