If the Saint-Gilles Parvis springs were ever to run dry, drinkers with high standards would fortunately still have Antoine Pierson’s little beer shop to keep their thirst quenched. From behind its stone-gray façade, quality (mainly canned) beers from across the continent flow freely. The owner, who has also got in on the alcohol-free action, happily unveils: a Trottinette lager from the Drink Drink brewery, juicy Pico Bello from Brussels Beer Project, a Polish pastry sour from Nepomucen, and IPA N.A from the Dutch brewery Vandestreek… As well as everything needed to turn heads: a fine collection from ‘t Verzet, a sour from Alvinne aged in oak barrels, and from further afield, Track straight out of Manchester, a Latvian Orpus or a French Nepo. // Rosa Poulsard
