Holy cow, this two-ton smoker was brought over from the Lone Star State itself! Across from the Porte de Hal, big-hearted meat lovers Gabriel Ejzenbaum and Agathe Legrand, who used to work in finance and PR respectively, are braising non-stop in their BBQ joint which (of course) is decked out in industrial style (smooth concrete floors, a cinder block bar, exposed piping). That’s where the tireless monster swallows and spits out massive platters of meat: pork chops, sausages, brisket, pulled pork, all served with the necessary sauces (homemade barbecue, bourbon and honey, honey mustard). And to give you an idea of what they’re working with, the shared Holy platter, tested the last time we went, could feed an entire regiment! But we still paired it with some very bright coleslaw (a welcome bit of freshness), a sweet slice of cornbread, and, oops, some buttered potatoes… All that before a respectable portion of apple pie, in true American excess and style. // Aline Flamme
