Take a cheesemaker (Didier Grosjean, who used to work at Barthélemy) and an art dealer (Chloé Salgado), give them a good shake and you’ll wind up with the best of both worlds, contained within a space featuring immaculate walls and old-fashioned tomette tile floors: to your left, impeccably sourced farm-fresh cheeses; to your right, a hundred or so carefully curated wines. Think bleu de Gex made with raw milk from the Haut-Jura, taken to go with a bottle of Alsatian wine from the Domaine Ostertag; Petit Paulinetois raw sheep’s milk cheese from the Tarn, made even better with one of the beautiful vintages from Sylvain Pataille or Fanny Sabre in Burgundy; butter and yogurts from the Kerbastard farm in Brittany, paired with a wine by Adrien de Mello or the Domaine de La Marinière in the Val de Loire… In short, everything you need to indulge in the pleasures the local terroir has to offer! // Frances Lo
