Watch out! Lies! Despite the name (a play on words between apéro and eau), there’s very little water to be found at the coastal apéro¬s of this lounge-like bar, a cross between a gentleman’s club and the VIP section of a ferry, apart from the herbal infusion they serve to prepare the palate for what’s to come. Served à la carte, you’ll find classic shaken cocktails alongside original creations by Olivier Snauwaert – who also designed the drink menu at Oberbayern. Sipped while seated between local surf school students and two girlfriends dishing about their week, we had a perfectly prepared Virgin Mary (€8), followed by a mouthwatering Fizzy Love, a mix of vodka, crémant, lemon juice and violet (€13). And to keep us satiated while admiring the impressive selection of whiskeys: three straightforward and satisfying croquettes (€10). // Mireille Flocon
