Clarified tomato juice, mirin and squid ink: just an example of what you might find in your cocktail if you head through the door of The Pharmacy. In a space with disco balls, neon slogans and stuffed ducks, the mixomagic performs its best tricks through sleights of hand by Jan Van Ongevalle and his daughter Noa. Sipped and approved the night we went: a Poulpe (€18) combining the aforementioned clarified tomato juice, mirin and squid ink with sake, mezcal and vodka, for a cascade of umami flavor; a Kore-Jan, a sort of Korean Margarita with Cazadores tequila, gochujang mousse (a spicy red chili paste), Cointreau and grapefruit. Otherwise, noticed on the next table over: a surprising Smoking Buddha served under a smoke-filled bell, mixing three types of whiskey, lapsang souchong black tea, almond and hazelnut (€18); and for the no-low players, a Lost In The Mall combining grapefruit and lemon cordial, balsamic vinegar, blackberry, fig and rosemary, chosen from five alcohol-free options – there’s truly a remedy for every type of thirst.
