He who wields the corkscrew last, screws around the longest! After having paid his dues in the kitchens of Gordon Ramsay, Michaël Boterman switched gears to become a sommelier at the two-starred De Jonkman. And when the time came to open a bottle shop of his own, his heart melted when he set his eyes on an old creperie, now complete with an imposing stainless steel bar, orange tones and 60s curves. Here you’ll find the boss serving a whole bunch of natural wines by the glass (including Mo:rot, a thirst-quenching Austrian red from Martin Obenaus at €7), with a penchant for skin-contact wines, like the Bianco Anfora, a trebbiano d’Abruzzo by Lammidia at €8, or the Ri_Orange riesling by Jus Naturæ at €9. But also a small selection of unruly wild beers from the DOK brewery (including the Johannes de Weize amber pale ale at €6 a can), craft sodas (Angry Yogi elderflower and sea buckthorn kombucha at €5 a can, Ritchie raspberry lemonade at €3.50) and tasty nibbles, like smoked sardines or walnut and fenugreek saucisson. // Schannul
