Who is the titular bakker Klaas? Klaas Vandenbroucke, to be precise, is the former owner of this bakery in the Mariakerke neighborhood, which he entrusted to Matteo Van Dijl (ex-De Superette)… who in turn handed over the keys to this centrally located shop to sisters Kali and Luna Carpentier, both of whom used to work at Rizoom. Still following us? All that really matters is that the sourdough bread here speaks for itself, kneaded with flour from Artemeersmolen (try the rustic loaf or, if you’re in the mood for something a little more original, opt for the roasted sweet potato loaf, the cashew and poppy seed loaf or the dried fig loaf) by expert hands. Those same hands also whip up buttery croissants, mastel gantois (local brioche), cinnamon knots, beetroot fougasse, craquelin sugary brioche buns, and cramiques raisin brioche buns… all of which can be devoured with your eyes, or gobbled up whole while sipping a specialty coffee – like the Honduran java roasted by RAF Coffee.
