In his minimalist chocolate shop, Jannes Deduytschaever gives pride of place to chocolate sourced sustainably from Vietnam, Madagascar, Venezuela and Mexico, which he uses to make bars and pralines with heady flavors, such as rose with lychee, mango with cinnamon, or thyme and lemon, as well as the devilish Monkeybar (basically, a luxury Snickers), and walnut, hazelnut or chocolate spreads. // Bobbi Rossi
