He’s hidden away a very “see and be seen” karaoke bar in the underground space of his classy Ghent cocktail bar. But for all those who are more into sipping than singing, there are some inspired cocktails on the menu: a dark and almost mystical Sugar Oncle (peaty Monkey Shoulder whiskey, walnut, almond and banana liqueurs, €15) or a very springtime Mauvais Temps Aujourd’hui (Ketel One vodka, Saint Nicolas de Verhofstede herbaceous liqueur, cherry liqueur and grapefruit cordial, same price).
