In this wood-clad, midnight blue underground space, vintage leather armchairs keep revelers feeling cozy. Recipes get revisited over time, there are major city vibes and an insane team, meticulously measuring out cocktails and chiseling ice cubes: Retour en 1999 (pear eau-de-vie and white vermouth, sublimated by notes of elderflower foraged by the team itself, €14) or Herbie 53 (a subtle mixture of gin, verjus, herb syrups, soda and bitters, €14), a drink resulting from an infusion of 53 dried herbs from the house’s medicinal garden.
