Located on the rather exclusive Lippenslaan, the brutalist bunker (concrete, aluminum and steel) from Tom Lansoght and Marino Opsomer (ex-Bacchus) brings Knokke to the forefront of both interior design and wine trends – who’d have thunk it?! First, the liquid assets: Pépin, a 100% Alsatian Muscat pet’ nat’; La Vague, a Côtes-du-Marmandais red by Sandrine Farrugia; and Mushroom Panda, a Piedmontese red by Fabio Gea. Follow up the €15-corkage fee pronto with a dish of the day prepared by sisters Sarah and Charlotte De Loof in the kitchen: Normandy-style chicken, fish curry, veggie lasagna (€19-30), to eat in or take away. // Mireille Flocon
