In Saint-Émilion, at the heart of a winery that’s better known for its sulfite-vinified bottles than for its punk rock pet’ nat’ wines, Daniel Donath (the owner of the Domaine de Bonaguil) and Patrice Hateau (the former operations manager of the Château Pape Clément) had the brilliant idea to open a wine shop for organic-leaning juices. Their personal selection? Local gems (Tire’ Vin Vite, a Merlot from the Château Tire Pé for €10, Le Futé, a 2015 wine from Pierre-Henri Cosyns for €24), a few bottles unearthed in the Languedoc (a Syrah-Grenache from Coste-Ubesse for €16, a Pinot noir from the Domaine de Clovallon for €14), and even a few options from outside of France’s borders, enthusiastically recommended – Wittmann in Rheinhessen, Alvaro Palacios in Catalonia, Bodegas Coruña del Conde in Burgos… And with all that, the big chateaux ought to be shaking in their boots.
