The (grand)son of…! In the Saint-Pierre neighborhood, two friends pay homage to their very nurturing grandmothers… Aka Henriette, the mamé of Christophe Pubert (founder of the former Fabrique Givrée), and Olga, the babushka of Dimitri Vigneau (a pastry chef by training), who would surely be proud of these sweet sorbets and ice creams! Here, nearly everything is locally-sourced and seasonal, from the fruits grown by terroir-ist producer David Dohin to the cream from the Fromagerie Deruelle, not to mention the specialty coffee from Café Piha or the Qori Anti chocolate from artisan Hasnaâ Ferreira. All of which Dimitri transforms into frozen delights in his windowed lab, in addition to lemon tarts, cheesecakes and pavlovas, among other sweet treats. What was in our triple-scoop cone? A much-too-rare Papua New Guinea vanilla ice cream, paired with Lot-et-Garonne hazelnut ice cream and an intensely flavorful lemon / pea blossom sorbet. // Kelly Slatée
