Let’s mix up the mixology world! Consider the trajectory of Hugo Seguy and Tom Moreno, two record diggers who also happen to be crazy about good drinks (the former cofounded the now-closed Sambrosa in Bordeaux, the latter used to work at Pachamama in Paris), who set up their happy little bar on a quiet street – a very discreet wooden storefront, shelves filled with bottles and vinyls, highly visible turntables. Their motto? Natural wines and a few playful potions: De l’Autre Côte, an ardent Alsatian white produced by Christophe Lindenlaud (€30 a bottle), Disco Sour with sweet and bitter notes (pisco, triple sec, agave and lime, €12), a fruit-forward Genius of Love (cachaça, orgeat and passionfruit syrup, same price)… All of which are served with something like burrata sprinkled with pistachios or a delicious plate of Maison Maisor smoked anchovies from Getaria – which come with a steep €20 price tag though! // Marise Effouet
