From Sweden to Nice’s backcountry! Formerly of Bastard in Malmö, chef Stefan Linde moved to the picture-perfect village of Tourrettes-sur-Loup to open a country bistro with his partner Élise Delattre, that’s been given the Nordic touch (immaculate walls, dark tiling, light wooden tables). The other day at lunch, seated on the gigantic, sunny terrace, Stef’ sent out well-crafted plates: celery roasted in the oven for six hours and then plunged into an ecstatic Parmesan broth; seared tuna topped with a horseradish cream and intensely flavorful pickled turnips; or braised endives with fresh goat cheese, crushed hazelnuts and lots of browned butter; a perfectly cooked turbot steak with sautéed cherry tomatoes (in February though!), all sprinkled with pancetta breading; before a miraculous chocolate ganache cake with olive oil and fleur de sel. And to take things a little further, the duo recently opened a natural wine bar (Jaja) less than a hundred meters away… // Gwen Jacquère
