On the ground floor of the uber-trendy Jam hotel, Kaiju has all the makings of a brut/chic neo-fusion-street food spot, which could rub non-English speakers and those who don’t identify as #foodies the wrong way. But Franck Bouzendorffer’s shareable plates totally rock! Slurp-a-licious wonton soup with duck broth and shiso oil; crispy char siu pork croquette with a sweet and sour pear dip; punchy roasted sunchokes with siphoned shiso butter; and addictive chicken and crab spring rolls with jalapeño jelly. Worthy of their very own Instagram post are the umami-esque pork ribs (sourced from Brasvar) with an apple and ginger glaze, kimchi and black garlic mayo; and the silky-smooth yuzu crème brûlée with muscovado sugar and a creamy yuzu sauce.
