Pure and simple love. That’s what Étienne Boissy and Bénédicte Dartois, the duo behind From Comptoir in the Saint-Gilles neighborhood, feel for cheese. Here, there’s more than just cheese – those made in Belgium are aged in their own personal cellars – there’s also delicious charcuterie from Lyon’s famous Halles Paul Bocuse market. You’ll also find: cervelle de canut, a Lyonnais specialty made with faisselle cheese, chives, shallots, olive oil and vinegar; and brie de Melun (the brother to the more-famous brie de Meaux) that’s been perfectly aged, among other beauties.
