Pure and simple love. That’s what Étienne Boissy and Bénédicte Dartois, the duo behind From Comptoir in the Saint-Gilles neighborhood, feel for cheese. Here, there’s more than just cheese – those made in Belgium are aged in their own personal cellars – there’s also delicious charcuterie from Lyon’s famous Halles Paul Bocuse market. You’ll also find: cervelle de canut, a Lyonnais specialty made with faisselle cheese, chives, shallots, olive oil and vinegar; and brie de Melun (the brother to the more-famous brie de Meaux) that’s been perfectly aged, among other beauties. The couple are hoping to make you as addicted to cheese as they are! They offer up tastings and workshops to spread the cheese love. · Kiko Zushi

THE HIDDEN GEM: Feta aged in wine barrels by the Flegga creamy in the Massif du Pinde (€14.20 for 400 g).
