Have you ever seen pasta that talks with its hands? Nope? Go check out Mangiavino over in the municipality of Forest, which is now in the capable hands of Laura Cuvelier and Nicolas Hossey, who have brilliantly taken over from Ambre and Michele Rosa. In this delicious wine’n’grub joint full of knick-knacks (Berkel slicer, posters by Tolmer, duck green velvet banquettes, vintage chairs), chef Flora Zelada whips up dry pasta, cucina povera-style, every day, with local organic vegetables and artisanal products from Tuscany and Lazio. The d ay we went, after a badass assembly of artisanal charcuterie (prosciutto, capocollo, mortadella and guanciale) brought back from Salumeria dell’Abbazia in Le Marche, we didn’t need to be asked twice to devour our penne enveloped in a silky tomato and butternut sauce, all whipped into a frenzy with a generous grinding of pepper. If you’re hungry after this little feast, the desserts – panna cotta or tiramisu – are not to be outdone! //Kiko Zushi
