Not too far from the Brabo Fountain, fermentation lovers Berthe Dheedene and Tim Thiessen (who used to own Kolombo) pay homage to the holy brine (and the no less venerable yeast) in this aptly-named coffee shop – which is also a reference to Jim Carrey’s character in the TV show Kidding. Each element of the menu contains at least one well-preserved ingredient: marinated chilies in the robust ginger chicken sandwich; warming kimchi pork belly; pickled pears served with the buttermilk and summer berry crepes; and brioche topped with horseradish cream and shaved pastrami, a heavenly combo! // Janjan Bon
