Forget the red-light fantasies – on Chaussée de l’Amour, a different kind of pleasure awaits. Enter Noen: the new bistronomic hotspot that sends pulses racing in Saint-Trond at lunchtime. At the helm is Daan Dams, who’s traded wedding catering for locally sourced, high-voltage flavors, serving the lunchtime crowd in a large greenhouse lined with lush green tiles, blond wood, an open kitchen and a view of the fields stretching out in the background. To kick things off, small bursts of flavor: pan de cristal topped with marinated picanha and harissa mayo; kohlrabi with smoked mackerel and a makrut lime buttermilk vinaigrette; and a glazed pork belly skewer dusted with dukkah. Then come the heavy hitters: an XXL shrimp croquette lounging on a medley of peas, runner beans, pickled onions and tarragon; or white asparagus teamed with broad beans, cockles and a dashi beurre blanc. And for the sweet finale, a dessert to make diners blush: white chocolate, strawberry, rhubarb jelly and a scoop of Melone sorbet – the iconic melon grown in Limburg! Not forgetting the cult-status homemade bokkenpootjes, gobbled up in one. The cherry on the bento?
