Sébastien Perinetti, Le Fooding’s Best Oenonaute of 2015
In his vibrant watering hole (exposed stone walls, brown banquettes, red Formica tables), Sébastien Perinetti shows off his prize wines and takes you on a tour of the French Riviera. The other night, chef Elmahdi Mobarik (formerly of La Réserve de Beaulieu) treated guests to a slew of dishes made with outstanding ingredients: impressive raw gamberoni from San Remo, on a bed of watermelon and tomatoes dressed in olive oil; an explosively flavorful combo of charred eggplant stuffed with veal and a spelt wheat risotto with octopus; before a slice of flan(tastique!) made with local sheep’s milk and prepared by Nelly, the pastry chef. What about lunch? Crémat pepper stuffed with organic lamb from Estéron, served with panisse fritters; mullet fillet caught off the coast of Nice with a bourride sauce, etc. // A.A.
