Welcome to Libertalia, the type of inn that only exists in fairytales! This imposing family estate (a big vegetable patch, an immense terrace, solid wood tables) belongs to Pierre-François Maestracci, who grows his own vegetables and grapes, and brews Ribella beers. What’s more, the hyperactive chef grills sophisticated meats and the catch of the day, as well as cooking incredible pizzas in his wood-fired oven. For us, the night we went: a well-seasoned gazpacho made using tomatoes from the garden; a big burger made on a homemade bun with Nustrale pork shoulder, dripping with local honey BBQ sauce and mayo seasoned with organic lemons from the garden, served with grilled pepper and zucchini blossoms; an incredibly flavorful pizza topped with pancetta and zucchini; before a gigantic brocciu cheese hugging a sweet strawberry coulis. // G.LeP.
