In his olive oil shop in the Vieux-Nice neighborhood (two-toned tiling, cheesy old paintings hung on the wall, jugs of extra virgin lined up along the walls), the spiritual Nadim never gets tired of dealing out his liquid gold, which he pairs with small, clever dishes cooked up by Régine and Irène. The day we went for lunch: the creamy eggplant caviar with marinated peppers and fresh goat cheese was illuminated by a fresh, green Bouteillan olive oil; the copious trumpet zucchini lasagna was moistened by a rich, full-bodied Picholine olive oil; the intense Mediterranean tartare was dressed in a lively, spicy olive oil; and even the tiramisu had some olive oil whipped into the mascarpone! // A.A.
