After toiling away in Parisian markets for 10 years and winning various fish-related competitions, Quentin Lorotte has settled down in Nice with his knives in tow. He’s been based on Rue Bonaparte since 2017, in a shop highly appreciated by foodies. In his sparkling white space, the fishmonger displays his carefully sourced specimens: monkfish, cod steak, squid, high-quality salmon, Albacore tuna or pollack from Manche Marée – his favorite –, and fresh shellfish, like oysters and sea urchins. But if you want some of his stellar seafood and briny advice, you’ll have to get in line just like everyone else! // L.S.
Hidden gem: The unrivaled whole Label Rouge Scottish salmon, smoked over beechwood by Quentin himself (€9.50 for 100 g).
