At first glance, this appears to be a run-of-the-mill little workshop, tucked away in the shade of the Sainte-Marie church. But step inside Tortilleria Benelux and you’ll discover an entirely authentic slice of Mexico, in its most artisanal form. That’s because the maïstro Daniel Cisneros Perez takes nixtamalization seriously, the ancestral technique of soaking corn in alkaline water before cooking, grinding and pressing it into gloriously fresh tortillas, which are fast winning over Brussels! Want some insider advice? You can now devour these freshly cooked tortillas in house, loaded up with good things! The last time we went, it was a true feast of flavor: tender, aromatic beef tacos; generously filled quesadillas, even better with a dash of the homemade salsa; and nachos with guacamole to go with it all, crunchy and balanced, just like top-notch street food should be. Truly a-maize-ing! // Gordon Bleu
