Former graphic designer Vincent De Troy owns the bakery with the most bizarre opening hours in the capital. A different day, a different loaf – and good ones at that, made with natural levain and Belgian flours sourced from a very short, local network of producers. The stripped-back counter is tucked up against the bread oven, so Vincent stuffs his spelt-wheat or rye-wheat loaves, tasty mini-kouign-amann, pretzels, potato buns, apple cinnamon rolls and pistachio and cranberry buns right under his customers’ noses, much to their delight! And in a nod to his past life, the baker flexes his typographic skills on the storefront window, with some sweet little doodles that are anything but crumby. // Rocky Simone
