Already supplying Paris’s little natural-wine world through her agency Effervescence, this discerning drinker needs little encouragement to crack open one smart, highly drinkable pick after another. It’s the kind of place where it’s easy to go with the flow, whether you’re feeling adventurous (even if it’s not love at first sip) or playing it safe (she’s got plenty to see you through), all in the solid company of Utah Beach oysters, Comté aged for 30 months from Essencia, terrine from Viande Viande and spot-on small plates.
