The “lumberjack from Dakota” theme was curiously absent from the Parisian bar scene. With its wooden walls, hunting paintings and country music, Le Castor Club does a good job of filling that void. Under the glassy gaze of a stuffed beaver, we sip on calming homemade recipes concocted by Thomas Codsi, the owner, who also runs Le Reflet on rue Champollion. For example, for €13: a Turkish Delight that’s overflowing with spices (pisco, Arabian gum syrup, Chartreuse Liqueur from Le 9e Centenaire, pistachio cream, lemon and cardamom), a Chirac 95 (calva, génépi, apple shrub, egg whites, lemon). Or for €8, a mixture of fresh fruit juices. On the weekends, the basement turns into a punk rock dance floor. // A.B.
