No more three-piece suits here! Former employees at the Prince-de-Galles five-star hotel, Christopher Gaglione and his team have traded in their finery for tee-shirts, elevator jazz for hip-hop, and their luxurious past for Solera. In their teal space, it’s all hexagonal mirrors, wooden rafters and brass, while the cocktail menu lines up creations like the Art Japonais with peach notes (G’Vine Nouaison gin, June liqueur, elderberry tonic, cranberry juice and peach mousse, €12) or the Smash Paris served in a flask (Monkey Shoulder whiskey, mint, Southern Comfort, vanilla sugar cane syrup, lemon, passion fruit). A few other possibilities: answer the bartender’s questionnaire and he’ll make you a personalized cocktail, or order a mocktail (€7). Snacks: miniature croque monsieur sandwiches, springrolls (€9)… // A.B.
