A miniature wine shop with maximum amounts of pleasure! Named after the great mathematician of the 19th century (try solving her theorem, we dare you), the colorful den of Jessica Morin, Haris Mebtoul and Barthélémy Gibault is shaking up the reserved Denfert neighborhood with exciting independent winemaker events. And what exactly will you find on their shelves? Rarities that really explore the terroir: Peaux, a macerated Angevin Chenin produced by Sylvie Augereau (€36), a very light Rhone red from Philippe Viret (€12), Les Pichiaux, a Touraine Sauvignon from Noëlla Morantin (€16), a Burgundy Aligoté by the daughter of Michel Couvreur, Alexandra (€48)…  // Wanda Wagner

The bullet-proof bottle: A 2018 Hautes-Côtes-de-Beaune produced by Marthe Henry Boillot (€35).
