All roads lead to rum! Within the Hôtel Monte Cristo, the exochic 1802 (named after Alexandre Dumas’ birth year) offers up over 500 sugarcane liqueurs (from the Caribbean, Réunion, Japan…) and a dozen cocktails in keeping with the theme, carefully crafted by Morgane Poirot (ex-Ritz). In a space withazulejos, Japanese prints and peacock blue velvet, we’d opt for a fantastic Honshu Island (rum, sake, roasted rice tea and lemon oil, €12), served warm in a teapot; or a more full-bodied In Cachaça Veritas, which invites grapes to the festival of sugar (cachaça, red wine, coconut purée, egg white and floral bitters €12). If you’re looking for something alcohol-free, try a straight-to-the-point Virgin Tiki Edmond made with sugarcane juice, mint, lime and passion fruit (€10). And for the munchies: burrata from Puglia (€10), salmon rillettes (€10), or even a baba… au rhum (€3). // A.B.
