Renovate an old Vietnamese restaurant in the middle of Rue Mouffetard to sell premium roast chicken? Sure, you’re on! After working in the restaurant and luxury industries, Victor Seguineau and Elena Araoz went on to found Segar (a contraction of their two surnames), in order to restore the image of the Sunday roast. In their shop with retro-cool vibes (tiled floors, Tadelakt walls, a mosaic rooster at the entrance), the star of the show is the 105-day-old Landes specimen from Les Frères Poulet. Marinated with spices (rosemary, thyme, smoked paprika) and massaged with mustard, it’s yours for €19.90 per kilo (or €7.50 for a quarter, €12.50 with two sides), to take away with the required accompaniments – which are seasonal to boot: new potatoes sautéed with thyme, pan-fried mushrooms, and for when hunger really calls, creamy chocolate mousse. What’s more, hiding a few steps behind the butcher’s block which is used as a cash register, there’s a mini deli counter filled with 100% French goodies, like olive oil, vinegar, mustard, terrine, chips… // John Mason
