Whichever way the wind blows, come hungry! There’s some seriously good, down-to-earth eating to be had in this village of just 300 souls between Figeac and Cajarc, where locals Coline Taisant, in the kitchen, and Jules Campan, front-of-house (both ex-Le Petit Moulin in Martel) have sent the winds of change through this sleepy village inn. Here, the chef lets impeccable local produce do the heavy lifting (suckling veal from Oustal Vedrune, delivered whole and butchered in-house, plus vegetables from Cajarc, Capdenac and Calvignac), the building blocks for deceptively simple, beautifully put-together plates. Everything can be switched up into a vegetarian or even vegan version, to be grazed in the rusti-cool dining room with its exposed stone and brickwork, or beneath a parasol on the terrace.
