Here at Stefania and Paolo Costa’s place, people come for the pasta fatta a mano, which you can watch being freshly made behind their shop window on Avenue Albert. At this trattoria, the big sister to the Bella Romana pizzeria on Chaussée d’Alsemberg, come enjoy hearty slices of deliciously fatty and salty porchetta and friarielli, before attacking the pasta – tagliatelle with all the sauces: coda alla vaccinara, a typical Roman oxtail stew; richly flavored calabrese salsiccia, ‘nduja and scamorza; or even amatriciana with guanciale, pecorino and just the right amount of heat.
