Authentic smash burgers have arrived in the land of bouillabaisse! The duo responsible for this feat? Marie-Laure Oddone and Damien Hirel, two former staff members of Gusty pizzeria in Toulon, who got their hands on this Brooklyn-esque space (waxed concrete, wood and metal tables) where they now serve entirely homemade burgers: potato buns baked fresh in house every morning, Angus beef from the Camargue, homemade sauces made with veal jus or fermented blueberries, homemade pickles, etc. The result? Burgers that’ll have you licking your fingers clean, like the Original Cheeseburger made with beef, aged cheddar, onions, gherkins, ketchup and mustard; the Green Chili Peppers that takes the same recipe and adds fried onions, pickled jalapeños and a creamy sauce to it; or the Smoky Joe with smoked bacon and a Texas sauce. All served with triple-fried French fries (a rarity!) or hand-crushed new potatoes. And if you’re living in alignment with the IPCC, you can replace the beef patty with a veggie one! To end the meal on a sweet note, have a freshly baked salted caramel cookie, or some of the incredible freshly churned ice cream, infused with Tahitian vanilla. // Gwen Jacquère
