At the entrance to the Nordic estate in Peisey-Nancroix, this heavenly valley is home to Carolyn Clapham’s chalet, which she dusted off four years ago, from the wine cellar (where beer is currently brewed today) to the attic (which now houses four bedrooms), not to mention the dining room (white walls, light wood, teal banquette with cushions). It’s where Caz, who used to work as a chef in New Zealand, presents a menu with vegetarian accents, from which we ordered the following one winter’s lunchtime: a red pepper and almond milk soup, striped with a carrot top coulis and served with a delicious cheese scone; just as reinvigorating, a copious tomato lentil ragù topped with slices of paprika-roasted red kuri squash, herb pesto, feta, red meat radish rounds and chioggia beetroot; and a rectangular chocolate terrine with thick icing, and best of all, a delicious miso caramel to pour over top. // Damien Sorin
FEELING THIRSTY? Mt Houblon beer produced onsite, served on tap in three different colors (€3.50), a Jongieux de Savoie Gamay from the Domaine Carrel (€4 a glass), an organic Chablis from the Domaine de l’Enclos (€50 a bottle), Petit Août, an Hautes-Alpes red from La Mémoire Neuve (€28).
