After training at the brilliant and now-shuttered Doppio, Mathis Noguet parked his truck with “Neapolitan pizza” soberly written out on it in a parking lot in Apt in 2021. Between a Leclerc supermarket and a Total gas station, the pizza-lover shows off his Italian beauties (only available for take-away): a Diavola with spicy sausage from Naples, fior di latte and red onions; a Rimini with a red pepper cream, mozzarella, marinated artichokes, cherry tomatoes and green onions; or, for us, a delicious Misano made with a light dough that puffs up around the edges, combining tomato sauce, mozzarella, minced mushrooms, thinly sliced baked ham and fresh basil. // Gwen Jacquère
