Things are grooving at this immaculate spot inside the Ménagerie de Verre performing arts theater. This former century-old printing press turned Carmen Arranz-inspired school welcomes in dancers and vegetarian diners alike for well-crafted meals. In the central space designed by Matali Crasset, everyone settles into the cozy seating, in order to blissfully savor the incredible set menus. The day we went, joyfully brought to life by chef Julie Bavant (ex-Arpège), there was all of the following: crisp Thai salad or a bright and refreshing melon and basil gazpacho; chili sin carne with smoked tofu and just the right amount of spice, or crispy focaccia topped with grilled zucchini and tomatoes; then very vibrant nectarines with lemon verbena and lemongrass syrup or a big creampuff served upside-down and filled with geranium-infused cream and strawberries. // Roberto Arenales
FEELING THIRSTY? A rainbow of colors fills these glasses: a juice of the day depending on the season and the mood (€3-5), along with Archipel kombuchas (€6 for 330 ml). And for anyone who really wants a drink, there are three natural wines available, including a southern red cinsault-grenache blend from Jape-Loup (€22 a bottle).
