Is this the best natural wine spot on the Riviera? Without a doubt! Valette, Cornelissen, Stephan, Pfifferling… all the organic stars can be found at Le Canon! Running this seductive gastro bar (vermillion tables, unfinished stone walls, waxed concrete, rows of bottles) is Sébastien Perinetti, who uncorks the very best of the local Nice countryside. For us, the night we went, there were a few beautiful fireworks lit by chef Elmahdi Mobarik: a splendid Haut-Pays porcini mushrooms carpaccio sprinkled with some beautiful organic Parmesan (€16); organic Mourerous lamb from Haut-Estéron, served with a mild eggplant caviar and trumpet zucchini (€27); before a floating island pimped out with hazelnuts from Cervione (€7). As for the bottles, they’ll keep you glued to your seat: Vinel-Lo, a white Catalan from Partida Creus (€6.50 a glass), a red Crozes-Hermitage, C’est le Printemps, from the Domaine Dard et Ribo (€6.50), an explosive Teresa la Grande from Cascina Tavijn (€35 a bottle), etc. À la carte €25-35 (lunch), €40-50 (dinner). // G.LeP.
