Sébastien Perinetti, Le Fooding Guide’s 2015 best Oenonaut
At this beautiful spot, the uncompromising duo of Sébastien Perinetti (front of house) and Elmahdi Mobarik (kitchen) put a sublime spin on the best Nice’s backcountry and coastline have to offer. Oils, lemons, vegetables, fish, dairy products…. Almost everything comes straight from small producers, wine-makers and artisans, and is whipped up in the kitchen, before being paraded out into this slightly vintage space (Formica-topped tables, brown benches). At lunch, served à la carte: divine crisp green asparagus with an herbed yogurt, arugula and small flowers; superb slices of Ségala veal with a spelt tabbouleh; and, for the finale, a powerful flame-charred lemon tart. As for the wines, there’s only good things to choose from! Vintages from Es d’Aqui, Ganevat, Vincent Marie, along with wines from Souhaut, Dard et Ribo, etc. Bottles starting at €19, glasses from €4 to €6.50.
